Second generation of Suisin Knife System Co.. Knife sharpener and specialist. Been in the industry for 18 years.

Shuji Yamaguchi 山口修二 [Sharpener]
Knife sharpener from Sakai City, has been in the industry for 25 years.
When Mr. Yamaguchi is sharpening a new knife, he keeps the user in mind. Mr. Yamaguchi can create an edge that is easily maintained by hand.

Mitsunori Ueda 上田光則 [Sushi Chef]
Mr. Ueda has been in the industry for 28 years. Mr. Ueda has a special license to handle blowfish. He is really skilled at cutting fish and knows the proper way of utilizing each knife.
Mr. Ueda use to teach chefs how to use traditional knives in New York.
