Q: Do I need a higher grit than a 6000?  

A: No, but having a higher grit stone will let you achieve a finer edge and is beneficial to the knife.

Q: Good budget stone and knife? 

A: I recommend the Togiharu Inox and the Togiharu double sided stone.

Q: Removing the burr? 

A: I usually use a finer stone to remove the burr. In some cases I will also use a leather strop.
