Q: Do I need a higher grit than a 6000?
A: No, but having a higher grit stone will let you achieve a finer edge and is beneficial to the knife.
Here are some higher grit stones that we carry:
Mizuyama Fine Grain Sharpening Stone – #6000
Kitayama Fine Grain Sharpening Stone – #8000
Q: Good budget stone and knife?
A: I recommend the Togiharu Inox and the Togiharu double sided stone.
Togiharu Two-Sided Sharpening Stone – #1000 & #4000
Q: Removing the burr?
A: I usually use a finer stone to remove the burr. In some cases I will also use a leather strop.
Here are some finer stones and leather strop that we carry:
Mizuyama Fine Grain Sharpening Stone – #6000
