The Suisin Hayate Light Kiritsuke: The Hayate line is a special knife created exclusively by Master Blacksmith Keijiro Doi for the Suisin Knife Company. In forging, Master Doi joins a large ao-ko steel billet with the soft iron body of this yanagi knife at the lowest temperature possible, resulting in the Hayate’s superior blade strength and edge life. The kiritsuke style is the only multipurpose traditional Japanese knife, however in Japan only the executive chef in the kitchen is allowed to own one in Japan.
